It's really not as hard to control the temp as it sounds. After the first 3 or 4 times of using it (and I suspect you will be like me and watch it continuously for 12 hours ), you will know what it takes to keep a constant fire. The Hondo and Bandera are roughly $260/280 at Academy (adding in assembly) The backyard Klose models come fully assembled, built per customer (take 4-6 weeks to get it) at $650 to 800 for the single chamber/firebox models. The $650 is the Hondo with 24" smoker/16" firebox. You can lengthen the smokers by 6" for another $50 per 6" increment up to 42". And you can get 16/18/20" firebox's at $25 per 2" increment. As I look at these prices, I'm thinking maybe I should just get the Hondo or Bandera, until I know what I'm doing.
Look at it like this.....I was on a Weber for about 15 years till I got my smoker 2 years ago. And in all that time I never got one complaint about my cooking. I bought the smoker for myself, not for anyone else. And I knew I could cook on it just as good as I could on the Weber. Someday I will step up again to the custom made jobs (that stainless steel one is still just a fantesy). But the one thing that will be constant throughout will be the quality of the food produced. Here's a nice, middle of the road one for you HeyP It's made by www.tejassmokers.com and they have several dealers across the city. You could pick this one up for about a grand, and it's much sturdier than the New Braunfels. ------------------ stop posting my damn signature

Sorry for being off topic partner. But I just wanted to thank u for that advice u game me about the filet mignons. I took your advice and didnt marinate them.
