Atkins recipes

    I was thinking about this the other day and I decided to post this. I know some of the members on this board are doing the Atkins diet and I started again about a week and a half ago on the induction phase. Three years ago I lost about 70 pounds on Atkins and decided it was time to get back on it after finding about 20 of those pounds.

    For you Atkinites out there, what is something you like to put together for lunch or dinner? I'll throw one of mine out to get it started.

    I like to cook up either diced beef fajitas, diced chicken fajitas, or ground meat and fill half a bowl with the meat. Then I shred some Cheddar cheese into it (plenty) and mix in diced tomato and diced avocado and onion. I top with grated parmessan cheese and add some hot sauce of my choice. I don't put any lettuce...it just doesn't seem to go. I know it sounds like a taco salad, but it seems to be a little lighter.

    LMAO!!! Now that I think about it...I heard that right before I actually made it. Coincidence? I THINK NOT!!!

    Besides, I don't use beans or fried tortilla...although I wish I could...
