I grew up in Houston and moved away almost 20 years ago. When I think of Houston cuisine, I think of Tex-Mex, and before the BP disaster, gulf coast seafood. I don't really associate Houston with BBQ at all.
Quickly went through the thread. Kolaches are more of a Central Texas thing (and the best are at the Czech Stop in West). I agree that the diverse food scene in Houston prohibits a standout signature dish, but if I had to choose, I would probably go with fajitas.
After some thought, I'd have to say that Kolaches really are a Houston signature even if it started in 'central' Texas. Do a google maps search for Kolache and zoom out- the overwhelming amount of hits is in the Houston area. I know that when I was in DFW I heard someone say 'what's a koh-lach?' I moved to Houston from New York City around the start of High school. Kolaches, Frito pie and Shipley's were completely foreign to me.
