Then in the pit, most of the Harpy's backed off when Drogon started BBQing them.

I think his death will also relate to his entitlement to do heinous things and spur Arya's further hatred of the Lannisters. There have always been "majorly evil" characters in the show. GRRMs point seems more about entire populations and their leaders. He has said that the leader of the villainous others in stories is also a hero. He's more concerned about tolerance. Once you see a rapist, pedophile, or child killing that character is dead.

The reason you didn't see Ramsay's Seal Team was so they don't have to pay the actor for the episode. The showrunners expressed that they had to cut the actor budget for the season.
