    Ever find a good marinade for them wings? Stop by Mexican meat market and grab some La Lechanero marinade. Has a pic of a pig with a bottle in its mouth. Awesome on pork or fajita also. I'm sure your a professional these days though!

    Thinking of heading over to heb getting some steaks and throwing it on the BBQ pit. Never cooked steak. Any tips?

    Don't get HEB steaks, get a good USDA or Nolan Ryan's at Krogers or something equal. Never had luck with steaks from there, they sure look pretty though.

    Yeah the HEB steaks are kinda meh tasting.

    Did a couple of racks of pork short ribs two weeks ago. I think I am going to do my first whole packer brisket, and do some beef ribs soon. Need to do some more research.

    Nice tips in this thread.

    I'm replacing my broken grill next month and will use these tips.

    Might get the 2-in-1 grill/bbq pit. Grill for quick meals and BBQ when time is available.

    Alright fellas, I could use some help. I'd like to purchase my Dad a new grill for Christmas. He already has a propane grill and he's said many times he should get a smoker but has yet to. I've done a little research and have found a few. I'm a college student, so I'm a bit on a budget as well.

    I don't think he'd need one too big, something to cook ribs, roasts and the occasional brisket I suppose. Is there a big difference between a smoker with the firebox and a normal charcoal grill?

    Weber Smokey Mountain is what I would recommend to get him. Cannot go wrong.

    ^ I concur if he really wants a smoker. The Weber smoker has done me good for years weather I am smoking a brisket, chicken, turkey, etc.

I've never tried to cook a brisket in a grill without a separate fire box. The fire box makes it pretty simple and leaves more room on grill for smoking.

    Weber smokey mountain would be great if he's only going to be using it to cook those types of things. Little more pricey though, although they have a 14.5" one that is $199, but that could be a little small.

    You can still "smoke" on a traditional grill without a firebox, just make sure that they use the "offset" method.

    I'll look into it. I can't say I dig the egg shape, but I'm open to all suggestions.

    Get a small round back yard fire pit. Get a $99ish barrel pit at HEB or wherever. Get a shovel.

    Build hardwood fire in fire pit and let it burn down for a while; shovel coals into the end of the barrel through the side door; heat the pit thoroughly; check temp; clean the grilltop; put meat on the other end (the one with the smokestack).

    Keep a steady supply of coals at the ready. Check temp. Drink beer. Add coals. Sit around the backyard fire. Repeat as necessary to keep bbq at proper temp. Eat.

    Cheap and easy. You can do ribs, pork butt, brisket, chicken, sausage or whatever you want to slow cook, and you can also build a bigger fire/more coals and use the same pit to direct grill steaks and burgers and chicken, etc.

    Don't leave ashes in the bottom of either, they'll get wet and rust it faster. When either of the cheapo pits wear out (5-8 years), just buy a new one.

    I'm incredibly indecisive about this whole ordeal. I've narrowed it down to these at the moment, let me know what you guys think. The main thing that will probably want to be cooked is some ribs. I'm really not experienced at smoking, so I'm iffy on trying brisket.
