    Dashes suck on mobile devices.

    Go with the vernacular.

    My 2 very rusty cents...
I have never used on-time before. I don't think that's a deal breaker unless you bump into a grammar nazi, at which other things you will never notice will pop up to them. When I screen tech resumes, I generally follow Word's recommendations, but I do admit hating the technicalities of grammar and ripping off Strunk and White for things like this.

As for the thank you letter itself, I'd judge it on energy, attention, and remembering people's names (a bonus). Reflecting attitude, gratitude and enthusiasm will shine better than the occasional ambiguities of formal business writing provided it's not below average.

My personal view is stay away from dashes when writing in a professional
level, it's okay when writing to friend or loved one but not when it's work
related. Hope you get the job!

With as little English and vocabulary as I know, and with as few of the idioms as I've known, I don't think you can use "on-time" as a preposition the way you have it here. I would use "on-time" as a compound phrasal adjective only.

    For example:
"Continental has the best on-time record of all airlines." (on-time being used as a compound phrasal adjective)
"We arrived at the gate on time." (on time being a preposition to denote "at the planned time")

    "in time"
I would use "in time" to denote a preposition to pinpoint a specific moment with time to spare:
"I barely got to my flight in time."

I don't think I've ever seen "in-time" as a compound phrasal adjective, though.

For your examples, I believe you should use:
I take great pride in getting the job done on [preposition] time .
    and
I take great pride in getting on-time [adjective] tasks done.

Dashes aren't informal. Sometimes they're needed. I see what you're saying and I hope you're only talking about this instance of "on-time", but I hope people read that it's your "personal" view and not something learned from a book.
