Been interviewing with these companies and I'm trying to decide which companies offer to take.

I'm just wondering how much waiters make at that place. So your bill was $ 675, the guy probably waited at least three tables at the same time (?). If they also had similar bills, he got 3 x 135 tip. Comes out to about $ 100 per hour, if everyone was there as long as you. Is this realistic?

They make a good amount, but they have to be good at what they do -- a much higher skillset is required vs. your typical restaurant. I believe the waiters have to split their tips with the bus boys and some of the other support staff. I'm not an expert on how their comp works, but I'd assume it's attractive, since waiters at high end restaurants tend to not turnover as much as other places.
Wasn't the alcohol half your bill? For a 10 course meal for 4 people the price doesn't sound bad. I've been the Uchi here in Austin on dates and I think my tab was sub $175 each time before tip. I generally don't order high dollar bottles though. Actually, I can't even remember what I paid. #imaboss
