    Yeah, it seemed like he was doing more "heat" challenges in the last season than actual "bulk". That show is like food p*rn.

    500 pages to this thread with all the "experts" about Texas BBQ and I find it amusing that not one person mentioned that Tinman's picture of pulled pork w/ a side of BBQ sauce is not Texas BBQ. lol.

    hahaha true. They do have pulled pork which is not a traditional Texas BBQ item. However, he went around the south and did some research to make a good pull pork. In the picture, it's on top of the brisket.

    The brisket is still the star of the show.

    I like most BBQ except not a big fan of the heavy vinigar sauces of the Carolinas. But with all the opinions around here and everybody so quick to call out the next person for the smallest inaccuracies, not one person called this one. I kept reading expecting someone to lambast you ...never came.

    Just recently, folks were called to the matt for chile with beans. Yet nobody corrected the pulled pork reference.

    Maybe since no one else filled the role, maybe I'll just have to step up and call you some sort neolithic pagen and offer this as the latest example of why Texas should succeed from the union so we could deport the likes of you.

    That said, looks pretty tasty.

    Earliest I've been there is 1pm.. other times it was like 3-4pm.

    Oh yeah. That's probably way too late for that place (not sure about the new location), but I've heard at their old little trailer location, they'd run out of food around 11am-noon (not sure if that's true or not).

    If you ever want to try Snow's BBQ, get there before 10am. They open only on Saturday's around 8am until they run out of meat which used to be before noon. People start lining up before 8am. I've had the brisket, and I can understand why. Which is why I want to try Franklin - to see how it compares.

    I thought the thread is about Texas BBQ places, isn't it? If all we talked about is "real Texas BBQ", we'd be sitting here talking about brisket and non-existent-at-most-restaurants beef ribs. "What? You brought up pork ribs in a Texas BBQ thread?! TAKE THAT CRAP BACK TO MEMPHIS!" "What?! Sides?! SERIOUSLY??? SIDES?! DIE!" :grin:

    And chili should never have beans in it. Talk about the wussification of a great meal. ;)

    I was expecting the owners of a place with the rep of Franklin to be overweight, in their 50's, and sound like Old West gunslingers. Instead I get a couple that look like they quit their C# programming careers, shop at Whole Foods, and just gave up their vegan lifestyle. lol. Sweet.

    Castell General Store FTW! Stayed in some cabins there this weekend (about 20 miles west of Llano off Hwy 21). The town has a listed population of 23. Just a few houses and ranches and this general store. They only bbq on Saturdays and typically run out around 2 pm. We went early and placed our order and picked it up at 11:00. We got some ribs, brisket, and sausage. The cook gave me a piece of the pork steak. I wasn't planning on buying any, but I couldn't get that amazing taste off my mind. I'm not sure what they use, but everything there is simply fantastic. Can't wait for lunch tomorrow when I have some leftovers.

    franklin's done blown up! still can't believe i've never made it there.

    Texas has been getting much love from the foodie world latey, and rightfully so... bon appetit had an excellent piece on houston last month.

    Wow, I'm glad to say I had gone back when it was in a trailer. I'll be making a pilgramage to the new location when I'm back in Austin.
