I had some GREAT BBQ the other day at this Shell station on 290 in Waller. The brisket there is simply awesome. The potato salad is pretty good too.
You know what ? Bar-B-Que is crappy meat. Slow cooking can't fix that. All Bar-B-Que is crap. Just cleverly disquised. Get a steak. Oh, yeah, I grew up with South Texas Bar-B-Que religion, in case you were wondering. I've been to all the "best" places. It's all a bunch of crap. You all just drank the cool-aid. Suckers. Screw it. Bar-B-Que is just carne guisada with fake religion, smoke, and sickly sweet sauce.

Texas does beef the best. If you want sauce you go oklahoma or kc (I like "head country") carolinas and memphis is pork. Sauce in my opinion is important I like the best of both worlds.
My cousin is BBQing today....now that boy can cook. I usually go to Demeris BBQ (it isnt the best), its the only thing close to my work. That 'Relations with Cattle' thread kind of messed me and my appetite up.
Yeah, but isn't that true of most ethnic staples? Fajitas, fried chicken, gumbo, chili, etc. Some of the great food traditions in the south come from slaves and sharecroppers trying to make do on cheap ingrediants. Now I love steak, but I also love sushi. Both are very expensive ways of getting your protein. And besides, have you ever had the smoked sirloin at Texas Land and Cattle? Best of both worlds. But man cannot live on tenderloin alone. Just because you don't dig on the food, I see no reason to knock it because of the cut of meat it uses.

I created this post the week I moved to Houston now 6 years ago.... My verdict is The Hickory Pit is the best followed by Luling Market and Goode Co. after those.
Just want to say that this is the single worst post I have ever seen on any bbs ever. Like "if I saw you I'd punch you in the stomach" bad. Anyways..... Gatlin BBQ on 19th or 18th in the heights is definitely legit and damn inexpensive.
Casting my vote for Pierson & Co. on TC Jester, also a bit of a drive but worth it. Someone on this site (can't remember who, sadly) asked about it and I tried it out--so good.
I've loved Pappa's Since it was the Brisket House on Woodridge. I'm going home this weekend and will have to try that Goode Co if its still around. I've always heard good things. Man I miss good BBQ. This weekend though.
Why is the BBQ sauce at Goode's oily water? Is that what BBQ sauce is? (It isn't, you have a lot of explaining to do.)

I really need to check out Pierson's and Gatlin's soon. The best 'cue in College Station is Rudy's, which is consistent but rarely divine. Also 29-95 definition of great brisket is spot-on. I've been living in Texas for 10 years, and initially didn't get the fuss about brisket, because I was exposed to too much of the dry, roast-beef tasting stuff.
