Well, think about making jerky: You buy (just for easy round numbers) 1lb of sirloin or whatever, then you trim it, then you slice it, then you season it, then you smoke it....and you end up with 1/3 to 1/4 lb of finished product. It's a pretty labor intensive endeavor, if you want to do it right.
I've thought about it. I have multiple dehydrators, ovens, etc. Just not sure I love jerky enough to do it. lol. The best jerky I ever had was some a co-worker would make in his apartment oven whenever he got bored. Of course most wouldn't call the way he made it real jerky, and it probably wouldn't last too long in storage, but it tasted awesome. Maybe I'll give it a whirl in a few months if I get bored or curious enough.
You can do tolerably ok jerky with a dehydrator (very marinade dependent), but it really does miss the bit of smoke and fresh air (less marinade dependent). Being the carnivore that I am, the only stuff I've done with my dehydrator this spring/summer are peaches and cherry tomatoes
