    The BBQ restaurants in SC I was referring to were called Maurice's Piggy Park BBQ. I went to one once probably in Columbia.

    The sauce was Maurice's Southern Gold BBQ Sauce. You can still buy it on Amazon. It's a change of pace from the regular sugar heavy crap you get at stores these days. Works best on pulled pork. It is heavy on the vinegar, though.

    But, like I said, it's not without its controversial history regarding race and slavery.

    I've found that southern BBQ is pretty much just pulled pork which is really easy to make. And the regional varieties are about what kind of sauce they put on it. Correct me if I'm wrong.

    Pulled pork is big in the Carolinas.
    Memphis BBQ is famous for its spice rub. I only had it once and it was really good.
    Kansas City BBQ is famous for its sweet and thick BBQ sauce (find them in most grocery stores).
    Texas BBQ is famous for its brisket, as well as sausage (thanks German immigrants) and chicken.
