I feel like I made this during the pandemic because I remember buying cans of Guinness for it, except I used lamb instead of beef, and it tasted bad because of the lamb.
I'll have to try again with beef.

I'm with ya there. I even like Haggis more than that type bacon. I prefer crispy bacon. I've also eaten plenty of coddle at the homes of my Irish friends while there, but I'll take a Prasek's smokehouse sausage any day over that squishy stuff they call sausage.

When I first went to Ireland in 2009 they didn’t seem to understand the concept of crispness in food. Everything was some variation of soggy. Even the fish and chips they wouldn’t fry them as much as we do in the US.

Recently though they’ve discovered that crisp and crunchy food is good and most of the chips / fries I had recently actually had a crunch. That still hasn’t extended to “bacon” and their sausages also seem on the soggy side

Maybe this is unpopular, but the haggis I had in Scotland was pretty good and I’d eat it again.

I think in 14 days I hat 20 orders of fries/chips. They are great.
I do love the tall thin packets of condiments, and the pepper sauce with EVERYTHING.
The steak will never be what we are used to. Smaller cuts and that grass fed flavor.

I didn’t have any steak in Ireland but on my recent trip had some of the best lamb. Ireland’s lamb is already high quality but the first night in Dublin found a place that did perfectly seared lamb chops. Then in Galway found a place that did slow cooked lamb shoulder.

They do love lamb over there. That's something I pass on though. I'm a meat eater, but something about eating the cute little lambs I just can't do. I'm the same way about eating veal, and I'd certainly not ever eat puppies in countries that do. I'll try just about anything else except horse, dogs, cats, and monkeys, even if it's not their young babies.

The blood sausage ("morcilla") they have in Colombia/Argentina/etc is delicious. Bust it open, spread it on some bread...mmmmmm

I do not do lamb at well. Lamb chop lollipops coated in mustard and baked with panko crumbs is ok.

Don't go to Iceland. horse is a staple there.

I'm good with goat. I worked for an electronics shipping company in Clear Lake back in the day. Was owned by Pakistani's.
We would have company meals on Friday's. Seasoned goat is all good.

Lamb tastes a bit gamey for me. I don't do venison either, or wild turkeys.

I like my animal's fat, slow, and grain fed.

One of the best hunting camp meals ever was when someone would show back up with a turkey or 2. Cut the breasts out, slice them like chicken tenders, buttermilk soak then flour, pan fry, then make gravy. With biscuits.

    Thats ambitious.
I usually pack a bag of beef jerky, a bottle of Vodka and a mixer.
If I'm feeling sassy, I will bring some Funyuns.
