Actually, we have substantial other evidence. That other evidence was presented at trial and evaluated by a jury (and the trial was televised so you can watch it for yourself). You could hear Zimmerman lose sight of Martin. You could hear Martin confront Zimmerman. You could see the wounds on Zimmerman's face and the back of his head. The autopsy report described the wounds on Martin's knuckles (from punching Zimmerman repeatedly). You could hear the testimony of independent witnesses that described one person on top of the other punching downward. It is a fantasy to believe all we have is Zimmerman's claims. In the real world we have evidence and a trial by jury.

There is also the evidence of Martin's phone record showing that he was on the phone not planning an ambush or attack. We have corroboration of that record and witness testimony. We also have the evidence of how if Zimmerman's gun was actually holstered at the time of the attack as he claimed, it would have been near impossible for him to take it out in the middle of the combat. Which all flows with the defense idea that Zimmerman was threatening Martin with a gun which would entitle Martin to legally attack Zimmerman.
Except that Zimmerman wasn’t just walking down the street. He was deliberately following someone who he thought was suspicious, might possibly be dangerous and was advised not to. The very argument they Zimmerman had to defend himself shows that he did put himself in a dangerous situation. how do you know that he was being pursued by an armed individual who did end up shooting him. What Trayvon Marin thought cannot be fully determined but from the cell phone records he was feeling threatened. We also don’t know what if any exchanges was made between them at the moment of encounter other than Zimmerman’s own words. How was Trayvon Martin supposed to know thst Zimmerman was in the phone with 911 or even what Zimmermans intent was? Also I don’t know the relevance of your last sentence. Neither Zimmerman or Martin were LEO.
Again all of this was hashed out in the Trayvon Martin thread. Leaving aside though the question of legality it is a fact that zimmerman put himself in danger. The argument that Zimmerman’s defense was justified can’t hold unless Zimmerman was in danger. This is another example why it’s a bad idea for civilians to try to enforce the law.
There still uncertainly about the Jordan Neely situation but I wouldn’t be surprise if manslaughter is the charge.
Especially when it turns out that they are criminals, proven to lie, and have been accused of other violent crimes.
