How do you cook your veggies?

    Please. help. me. I am so boring. I need new ideas. I am so sick of cooking the same vegetables the same way over and over again.

    Asparagus with parm cheese tonight.

    I am not a fan BUT I do like green beans and I cook them with onions and bacon.......lots of bacon!!!

    I do something similar but I go with the potatoes instead of the onions and throw some creole seasoning on them.

    I put Tony Chachere on my zuccini, squash and mushrooms... and basically anything.

    Yea I use the bold version myself...I found the original to be a bit bland and too salty.

    I throw in a little bag of taco seasoning with my onions and peppers. Italian seasoning or dressing with my corn and/or green beans.

    I roast a lot of veggies and they are pretty tasty. Here are a couple of ideas for you.

    * Put a good bunch of cauliflower / broccoli florets in a bowl. Pour over a few TB of melted butter, salt, pepper and a little finely grated parm. Maybe a dash of paprika, and the Mrs and I have been adding nutritional yeast -- great stuff. Add some herbs too. Throw in some slices of fennel in there or carrot sticks if you want more variety.
    Roast at like 375-400 F for about 20-22 minutes.

    * Mrs and I just tried this change on asparagus: Get a bit boiling pot of water and roast your asparagus for *90 seconds* only, then put them in ice water for 5 minutes. The result is perfect asparagus you can have as a side dish or throw in a pasta or whatever else.

    I air fry the b****es.

    Cut them up, toss with some olive oil and seasonings of choice and then about 10-15 mins in the air fryer and they're usually fab.

    Yes, that's how I do my asparagus. I chop it into smaller pieces first. Ive been making my own zucchini noodles with parm and then putting Rao's alfredo and chicken on top. It's really good.

    I need to get an air fryer, ive seen some zucchini chips made in them and they looks really good.

    sweet potato fries, zucchini, carrots, corn on the cob, Okra, I rarely cook veggies any other way now.

    I prefer the air frier that looks like a toaster over as opposed to the basket kind.

    Cook them in olive oil and seasoning in the cast iron til soft then throw them in the air fryer for 5 minutes. Its money dude.

    I blanche my asparagus for about 45-60 seconds, put them in an ice bath, and then finish them with some olive oil and chopped garlic. It cooks them perfectly. Soft, but not mushy. Add whatever seasoning you prefer.

    I posted this here awhile back but good bachelor trick.

    In a toaster oven or air fryer you can cook vegetables like carrots, broccoli, cauliflower, zucchini and asparagus. In a few minutes. You have to cut them relatively thin to make sure they cook through. You can even use baby carrots and broccoli crowns already cut for veggie trays.

    Put some cut veggies onto aluminum foil, drizzle with olive oil, sesame oil or pat them with butter. Sprinkle salt and pepper to taste. If you have garlic salt and onion pepper, Lowry salt can use those for seasoning. Put in oven and set to toast for medium toast.

    Also broccoli is the most versatile vegetable. You can cook it almost anyway and even eat it raw. It’s loaded with nutrients and fiber.

    In addition to eating the crowns if you get some leaves they are edible and so is the stem. A few years ago my GF who was living with me at the time grew some and while it didn’t develop the big crowns like what you get in the store the leaves of it were delicious and much more flavorful than even store bought crowns.

    For eating the stems they have to be cooked longer than the rest of the broccoli. They can also be cut up smaller and cooked like potatoes. In a fit of creativity I once cut up a broccoli stem into small cubes boiled and cooked them with leftover meat like a corn beef hash.

    If you don’t like broccoli cauliflower is pretty versatile but doesn’t have as much nutrition.
