Black Eyed Pea Soup

    I’d just do Frijoles a la Charra, but with Black-eyed peas v pinto beans. Maybe replace the bacon with ham hock for tradition.

    I ended up making a simple recipe over last 7 hours. Black eyed peas, smoked bacon, chicken broth, onions, garlic, tomatoes, habaneros, and a bay leaf. It was great but no one else would eat any … vegetarians

    You didn't know they were vegetarians? Or did you just want to eat it yourself? lol

    Bacon is the no no. Most vegetarians I know are ok with chicken broth.

    Recipe we use. Can easily be halved. It makes a lot.

    5 slices bacon, cut up
    1 medium onion chopped
    2T cut up pickled jalapeños
    2 cups diced tomatoes drained
    1 garlic clove or powder to taste
    3 cups water
    2 beef bouillon cubes or 2 t granules
    4 cans black eyed peas drained
    3 cups cheddar cheese grated.

    Sauté bacon until lightly browned, add onion until translucent. Add chopped jalapeños, tomatoes,garlic. Add water and granules to mixture. Drain peas and add to soup, simmer for 30 min then add cheese. Add pepper to taste.

    The kids aren’t vegetarian but they skipped it anyway. So I am stuck eating it myself.
