I’d just do Frijoles a la Charra, but with Black-eyed peas v pinto beans. Maybe replace the bacon with ham hock for tradition. here’s Rick Bayless showing a simple one.

Recipe we use. Can easily be halved. It makes a lot. 5 slices bacon, cut up 1 medium onion chopped 2T cut up pickled jalapeños 2 cups diced tomatoes drained 1 garlic clove or powder to taste 3 cups water 2 beef bouillon cubes or 2 t granules 4 cans black eyed peas drained 3 cups cheddar cheese grated. Sauté bacon until lightly browned, add onion until translucent. Add chopped jalapeños, tomatoes,garlic. Add water and granules to mixture. Drain peas and add to soup, simmer for 30 min then add cheese. Add pepper to taste.
