This year, 60% of restaurants reported reducing their menu size, according to Datassential, a food-industry market-research firm that studied more than 4,800 menus in the U.S. The menus at fine-dining establishments were hit especially hard, with the number of items declining 23% over 2021, says Datassential’s Sean Jafar, who studies menu trends. The consumer-price index for food away from home, which includes purchases from restaurants, rose 5.8% over the past year, the largest 12-month increase since 1982, according to Bureau of Labor Statistics data. Today’s restaurants are focused on reining in appetizer and dessert offerings. Pricey proteins such as tuna, steak and salmon are also harder to find at some upscale spots. “A lot of restaurants are trying to keep the quality, not quantity,” Mr. Jafar says.
I’ve noticed that too. I eat out and get takeout quite a lot. One because my schedule has been ridiculously busy but also because I want to support local businesses.

Food costs being the Achilles heel for restaurants is nothing new. What has happened though started happening years ago though and isn’t a product of the pandemic era. Restaurants have just gotten better and gather shared knowledge of ingredient efficiency and freshness. Having large menus means too many ingredients to keep up with which leads to relying on frozen items to increase they shelf life which leads to more prep, lower taste quality, and cooks that don’t cook certain items as much so they don’t cook them as well. The restaurants that survive are the ones that have food efficiency to a science and have almost no waste. That’s a death nail for restaurants. I’m all for smaller menus too as a consumer because I know those items on that smaller menu are likely to be better quality and I’m not ordering something that they’ll be pulling out of the back freezer. Yeah the pandemic is a factor for everything now but this isn’t a new trend. The pandemic just puts business adjustments and innovations on a fast track like in my business where we didn’t have the time to put off what was always trending but innovation was more slow moving.

Naw…I want every restaurant to have a menu that’s 25 pages long…and with pictures damnit! Why can’t I get a damned hamburger at that fine Italian restaurant? FREEDUM!!!!!! I work in the equipment side of the industry. Getting equipment is hard enough right now (especially refrigeration). They have to become more efficient in their storage because if a walk-in goes down, they could be screwed for months. And like you said, there are absolute benefits to narrowing down menus and being good at fewer things instead of being mediocre at a lot.
