I think this is just a case where everyone wants NBC to show their own personal favorite sports. I imagine NBC has a ton of historical data on what events generate the most interest and most ratings and has organized its coverage accordingly.
We reached the finals in waterpolo, beating the legendary Hungary at that. 2 of the players come from my hometown and my swimming club! The captain of the team used to be my schoolmate. Most of the children join swimming clubs and the best of the best make it to waterpolo. In younger national teams we make half the players but we finally will win in the Olympics. After I don't know how many years my island will again have Olympians.

Mexico beat Japan 3-1 for the bronze medal in soccer. In the 68 Olympics Mexico lost to Japan for the bronze... although players from that 68 Mexico team have said they took a dive against Japan in the bronze game and Bulgaria in the semis because they were unhappy with the payouts.
I dont know anything about wrestling, but this "kid" for USA looks like a 45 year old with a full beard is only 21.. how? lol
