The best peaches in the world are in Central Texas. It is known. Clearly, you need to be educated about the origin of the dessert that puts pecan pie to shame, no matter how delicious it may be, and it is delicious. Peach Cobbler was invented by the wife of a shoemaker in Gillespie County back in the mid 1800’s. German immigrants, her hard working husband had asked about wanting something different than the apple strudel she made on special occasions. So one fine afternoon, while gazing at the peach trees behind their modest home, trees heavy with ripe fruit, she was struck with an idea. Why not bake something with those fine peaches? After some trial and error, she hit upon the perfect dish and served it as a surprise for her husband’s birthday. Their friends and relatives by the dozen had come for the party. She came out to the gathering in their front yard with a huge platter covered with bowls filled to the brim, a golden crust covering something that gave off a wonderful smell. Her two young children carried large bowls filled with ice cream they had made that morning, turning the crank themselves while their mother baked in the kitchen. The smell was of glorious peaches baked to perfection in a concoction of her own invention. Asked by a passing visitor from Fredericksburg, who happened by on his horse and was invited to join the festivities, just what it was that he had eaten, with ice cream, until he thought he would burst, the young lady answered, “Why, since you asked, I just thought of a name. It’s Peach Cobbler, named after my fine husband’s profession. He’s a shoe maker, famous in the county for the fine boots he makes.” “Madam,” he replied, “I don’t doubt that he is famous for his boots. I will order a pair after the party, if he doesn’t mind doing a spot of business on his birthday. What I’d really like to say to you, however, is that this “peach cobbler” of yours is going to be famous as well. If you would, could I have the recipe to give to my wife? It’s simply delicious!” She did, and before long Peach Cobbler had indeed become famous. Even more famous than her husband’s boots.
