    Been feasting on take out empanadas from Marini's Empanada House. It's hands down the best empanada I've ever had.

    Check them out. I go to the one on Mason in Katy but there's one on Westheimer too.

    Homemade Chicken soup from scratch. 3 hours making the stock and and extra hour for the soup.

    Salads for lunch. I feel more energetic and the rings around my eyes have disappeared. I usually sous vide a couple pounds of meat on sunday then add it to a store bought greek salad for lunch each day for the work week. Costco sells the giant bottles of Olive Garden dressing so there's my lunch.

    It is that. I love the fact that the empanadas keep well for several days afterwards and still taste great out of the microwave.

    I've been making homemade chicken-pot-pie. (I use leftover Costco rotisserie chicken meat)

    For Christmas, grilled a pork tenderloin.

    For Thanksgiving, cooked a turkey breast.

    For both holidays, I made apple pies, pecan pies, and coconut cream pie.
    Made my own pie crusts. For the coconut cream pie crust, I followed the steps from America's Test Kitchen.
    For the pecan pie, I use a family recipe that I'm not allowed to share.

    I do a lot of home cooking. Pan-seared chicken breasts with shallots is one of our favorites (I make a sauce out of the pan drippings).
