If anyone finds themselves in Matagorda County, stop at K-2 Steakhouse in Bay City. Outstanding CFS that's a great value particularly between 11-4. Lunch menu prices, but you still get access to their full soup/salad bar including rolls, PLUS two sides. I wouldn't claim their mashed potatoes are among the best, so I go fried okra and green beans( they also have fried green beans which are amazing). I do, about the sound of that black pepper jalapeno gravy a little bit.
You can also break down the hindquarters/hams into the primal muscles, then you end up with 3 chunks that make great CFS or, my other favorite, a sous vided roast (so freaking good). If it's a younger deer it's hard to tell the difference b/t that and backstrap, tenderness-wise. Yall have inspired me, pretty sure I still have a couple of packs of last year's venison in the ranch freezer, fingers crossed, will check later today.
