I thought State of Grace was way too loud for a quiet dinner. Music was playing and kinda loud which makes table noise louder around you as well. Da Marco or Tony's would be a good choice for Italian.
That old church isn't actually that quiet. Mark's had issues for years with the noise level until they put in a bunch of noise dampening stuff. I always liked Houston's on Westheimer if I wanted something quiet, but that location suddenly closed down a couple weeks ago.

Built out of two 1938 houses with their own herb garden, and add to that the fact that the Patrenella family is one of Houston's institutional first families of restaurant royalty. Not sure about quiet, but used to like Houston's as well. Although our last experience at the Westheimer location was horrible.
