    We went on a road trip this past summer and spent several days in Nashville. I gotta say--and I consider myself a real traditionalist when it comes to fried chicken--that stuff is really good.

    This does not help in my search for Hot chicken nor does it help satisfy my craving for it. Dammit man.

    Food network should be avoided at all costs late at night.

    They only do tenders and theirs isnt all that good. I need some real kick to my spiciness.

    Yep, depends on what I'm in the mood for, but I've been known to spice the hell out of some fried chicken (I do mine on the actual meat, like a brine/marinade and then batter it normally).

    eta: if I'm putting sauce on after it's cooked, it's always been buffalo or some type of Korean/Thai spicy

    Also, some of the best fried catfish I've ever done was, on the recommendation of a buddy, chunks first soaked in hot sauce for 30 mins then patted dry and cooked as normal. Didn't have any overpowering flavor, but the fish had just the right bit of spice.

    Ive already getting the stuff ready for a brine. I just hate frying chicken- its too messy and I hate the grease smell.

    Outdoor propane cooker will change your mind in a hurry. Then you can also do your own crawfish, shrimp, crabs, fish, 'barbacoa', etc....

    Protip: put down some cardboard or something under it to keep the inevitable grease splatters from staining your garage floor, deck, whatever.

    most crawfish places in Chinatown gonna have the viet style, spicy garlic butter all over.

    Yeah, not the hot chicken I was searching for(per my first post in this thread). Popeyes also serves "hot" and spicy chicken.
