    With a sous vide it doesn't dry out and toughen up when seared for a minute on each side. It just stays moist and tender. Although 136 degrees is too done for me. I sit at 122 degrees for however long I can resist not eating, coat with salt and fresh crushed pepper and sear for a minute as well.

    on a high heat skillet at 1 minute each side you would definitely get a nice quarter inch ring of brown over cooked meat.

    I can't wait to throw some seasoning in on some fajitas, vacuum seal them, sous vide them, and then finish them on the grill. I'm talking bulk fajitas baby!!!

    +1 Love comfort food. On the east coast that's diner food. Chicken soup or Beef and Barley soup. Pot roast. Meatloaf. Macaroni and Cheese. Mixed vegetables. Pie ala Mode.

    I like a good crust and the control of the sous vide hitting my desired flavor every time.

    any place that does a max-level hamburger, pizza or burrito. I know that’s cheesy and simple but it’s true. Pizza especially, that’s prob #1 for me if I have to answer with a gun to my head.

    Steak au poivre- cream/cognac sauce on a peppercorn crusted filet mignon.
    Mom’s Gumbo- chicken, andouille, shrimp and okra, homemade roux
    Soups- pho and Ramen, pazole and plain ol veggie soup
    My own chicken Alfredo- I know that’s a little self serving (pun intended) but for whatever reason restaurants make weird Alfredo sauce. I make the best Alfredo sauce you’ve ever had, according to many tastebuds
    Salsa- Good golly. Also make a decent salsa but never won any prizes.

    Any food that deeply resonates another person’s culture is cool too. I love food but it’s also a good way to break down walls. And if something is gross, at least you tried it.

    I cook anything and everything. I just made about six dozen tamales earlier today (leftover filling that I had in the freezer since the week before Christmas). There's a few ethnic foods that I'd rather make myself than have at any place in Houston, but making GOOD pizza, a GOOD hamburger, and GOOD French Fries can be some of the most difficult challenges there are for a home chef.

    My favorite food isn't one that I am able to eat all the time. So it is different than my favorite 'go-to' food.

    My favorite food is Alaskan King Crab Legs. Without a doubt that is the best food there is. I prefer it to lobster, steak, anything else at all.

    My favorite 'go-to' food is probably smoked brisket.

    I can do a pretty decent pizza, usually put leftovers on em but it’s a mess indeed. Well said though, French fries aren’t even worth doing with a burger store on every corner
