I've been making mashed potatoes more so that I can use the leftovers to make breakfast. Potato pancakes? What are they called? I'm sure there's a few names for such a simple recipe. You just hand form them cold and then pan fry them in olive oil for the crispy outside. Potatoes for breakfast is king of ideas.

Go to an international food store (Someplace like Jungle Jim's , though I don't know what you have down there that's comparable) and get some authentic german potato pancake mix. It's really, really good. You make them small and eat them with a bit of applesauce. Good for any meal. Trust me you will thank me later.

Well, not to toot my own horn, but I put together a pretty decent breakfast on the fly this morning. Toasted English Muffin with cream cheese spread, topped with a tomato slice, salted, topped with bacon and a poached egg.
