Tinsley's Chicken and Rolls - they shutdown or were bought out by Church's (at least that's what they turned into in Huntsville)...and you're correct, they had great chicken and the best rolls. I had completely forgotten about those guys until you mentioned it. They had some sort of corny mascot called Boss Bird or something like that.
I lived in Houston for 24 years and never tried Dirty's. I always heard it was good. I also heard the chicken fried steak at the 59 Diner (?) was good, too.

Those rolls were awesome. I remember they also had this big ugly brown DC-3 with Boss Bird painted on it...used to fly over my house all the time.
