Don't be that guy. This line of thinking has become cliche among the "anime elites". I've watched a lot of anime that are better than DBZ, yet I still find myself watching youtube clips of Goku going SSJ 1 and 3, Vegita sacrificing himself for his son, etc. There is an emotional connection to that rating IMO.
You gave it a 7, damn breh. Think everyone has some biased scores and gives a 9 or 10 to something that realistically isn't that good, but clicked for that person. For example me giving Inuyasha a 9 or you rating Bleach and One Piece a 10, which are full of filler. I didn't want a 10 to mean a show is perfect, but it should resemble the show being clearly one of the best ever and separating itself from the rest. FMA:Brotherhood is definitely one of those imo.
When a show manages to keep me (and many other people) coming back for almost 300 episodes, yeah it gets a 10. Was it's episode to episode quality as good as some others, no, but it's snobbery to suggest that the anime that is probably the most well known around the world is just OK. I've tried watching all of one piece and bleach, and those shows both lost me a some point, I've actually managed to rewatch DBZ ( even watched all of Kai as well).
Fillers dont ruin a anime for me. Just means I have to wait longer. Storyline and addictingness. Inuyahsha was okay. 7 or 8?
Probably an 8, as it touched on human emotions etc a bit better than other shounen anime. Also, the main villain was a ton deeper than what you usually have, especially with all the relevations in the Inuyasha sequel . But that's only an 8 if you really ackowledge the weaknesses and are critical. Sure, things like DBZ, Bleach, One Piece etc may be a lot better when it comes to visuals, epic storylines etc, but Inuyasha trumps then when it comes to subtle things and philosophy.

I was going to get into that but I need to catch up on Attack on Titan season 2. I watch them in ~3 episodes chunk and just finished watching an episode with a very big revelation.

Never watched any sequels. But if judging emotions, what did you give My name Your name? or a Silent voice? (don't remember the Japanese name but it just came out like 5 days ago). I had to remove some favorites to add the last one, lol.
