Idk if this counts but Butterfly by Crazy Town? Song was lit even though it is a Red Hot Chili Peppers sample.

    Eiffle 65 - Blue
American Hi-Fi - Flavor of the Week
The Calling - Wherever You Will Go
Khia - My Neck, My Back
t.A.T.u. - All the Things She Said
Fountains of Wayne - Stacy's Mom
    Howie Day - Collide
    James Blunt - You're Beautiful

I used wikipedia's list of one hit wonders, but I excluded Macy Gray, Snow Patrol, and Gnarls Barkley, because they didn't feel like one hit wonders to me. I am also using only the decade of the 2000's, not everything since 2000. Also, my usual caveat in all threads about "best" music, etc. There is no objectively good or bad art. It is entirely subjective, and these are just my preferences.
