Where do you buy your meat?

    I've never bought a beef shoulder clod before, but apparently they do. Here is the list of all/majority of meats that they sell there.
    I'm going to have to get one now, monkey see - monkey do!...:grin:

    I just use good ol' HEB. I buy HEB Prime 1 cuts in bulk when they are on sale. Example, a few weeks ago I got Prime 1 NY Strips for $5 a pound, and I bought about 20 pounds.

    me too.

    i buy at central market, which is HEB version of whole foods (but better).

    I do get my fajita marinada from La Michoacana by my house. They also have great pollo marinada, but their high-end steaks leave a lot to be desired.

    yeah that's the only reason I go to Mexican meat markets -- just the fajitas and marinated stuff. I wouldn't buy other meats from them.

    The cut steaks at a Mexican meat market are going to be utility/commercial quality. Anything you buy there needs to soak in a tenderizer.

    I'll buy marinated fajitas if I'm lazy from one, but usually I'll try and score some outside skirt and soak it in a pineapple/soy cause marinade over night.

    For me, the closest location to buy my meat to cook is also at HEB, but I wouldn't mind going to one of their actual "Central Market" locations, but I don't know where one is located near me. I'll look when I have some time later today.

    Skirt steak from HEB and left to marinade for 24 hours is amazing.

    Know of any places specifically to get good unmarinated skirt steak?

    La Michoacana meat markets are all over town. The problem with HEB is they are more expensive than La Michoacana for skirt and flank steaks - and they rarely have much. They literally have hundreds of pounds at the butcher counters in La Michoacana.

    It's difficult to find outside or flap which is superior to inside. I've seen it at Mexican meat markets on occasion, but most of this stuff is purchased through broad liners (I worked for Ben E. Keith for a few years so it was always easy for
    Me to score while working there).

    Yeah that's where I usually get my skirt steak but find the quality when I buy a small one or two pounds of unmarinated skirt from HEB to be of higher quality.

    Bay Area Meat Market just off NASA Road One. Small family owned butcher shop. The fajitas and thick sliced bacon are awesome.

    We stopped buying from phoenicia since their meat have become so bad (old). I second Adam and their new owners, pretty good meat.

    None of the Asian, Indian, Hispanic, or Mediterranean markets really have quality meat. If price is your concern then yeah these places would be hard to beat.

    But if quality is what you are looking for then HEB, Whole Foods or Central Market along with some specialty butcher shops are your best choice.

    I like to get steaks from HEB. Prime cuts of steak with really nice marbling.

    The flap sirloin from Whole Foods is the best fajita meat in town no question. You can even cheat and ask them to marinate it in their tequila lime seasoning if feeling lazy.

    For chicken I like Whole Foods.
