    Franklin's taco trailer behind the restaurant is open for business.

    For now, the core components of the taco menu are brisket, patty sausage and chorizo. And you’ve probably never had Franklin Barbecue’s brisket quite like this. The kitchen tosses the chopped brisket in its own fat and then finishes it on the plancha, giving it a nice, crispy texture like machacado that Franklin says is key to the soft taco’s appeal.

    “It’s really flippin good. I eat one every morning,” Franklin said Thursday.

    The breakfast sausage patties, which Franklin considers like a Tex-Mex version of classic Owen’s breakfast sausage, are inspired by fellow East Austinites Joe’s Bakery, which Franklin frequents. The chorizo is also made in house, using scraps from the pork ribs.

    For a small extra charge, diners can add more ingredients to the standard three-item tacos. Options include eggs, cheese, fresh guacamole, bacon and vegetarian refried beans. The trailer plans to add more proteins and veggie-friendly tacos in the weeks to come.

    Best sauce is Rudy's. Say what you want, but I've always found stuff that goes great with it. Burgers, for one.

    Finally tried Tejas in Tomball.

    Best brisket in Houston, IMO. Ribs were ok (Corkscrew is much better). Pork belly was fantastic.

    I lived in Logan Place Apts and the smoke would come in my door every day. Was a blessing and a curse.

    Just saw it on TV, actually. (Man fire food)


    My mom lives very close. Within a mile or two. Sadly, the last time I was down in Houston visiting, we didn't go.

    They did just open a burger place, I think on Main Street, too. I heard it's been drawing huge crowds. But I've also heard it's expensive.

    got there around 10:45 and wasn’t more than 10 people back. It was kind of a dreary day so I’m sure it could be worse.

    Overnight marinade in zesty Italian dressing with a few tablespoons of brown sugar.

    Another good one:
    1/4 cup cider vinegar
    3 tablespoons whole grain mustard
    3 cloves garlic, peeled and minced
    1 lime, juiced
    1/2 lemon, juiced
    1/2 cup brown sugar
    1 1/2 teaspoons salt
    6 tablespoons olive oil
    ground black pepper
    6 boneless skinless chicken breast halves

    Marinate overnight as well.

    Agree the (moist) brisket is very good. Next time try the Chile Relleno sausages and Burnt Ends (only Fridays and Saturdays, though they run out early).

    I've been back twice since. I've had the sausage which is fantastic. The beef rib was amazing.
