Cheesies in Chicago is delicious! I know, you are looking for a Houston recommendation but I haven't found anything good here. Melt in Cypress was trying but it was not very good and now it is closed. Houston really needs a good grilled cheese joint.

YouTube has about a million different pro chef videos on grilled cheese and they are worth watching for ideas. I think I discovered the most evolved and final form of the grilled sandwich, the Croque Madame by following the rabbit's hole of grilled cheese sandwiches on YouTube.
Madame has a runny egg on top, because the bechamel and extra layer of melted cheese is a half measure.
et le monsieur? eta: there's a little bakery in Llano, on Highway 16 around the bridge, that makes the best croissant/ham/swiss melty sammich you've ever had. Bonus, you buy something and a cup of coffee and they give you a fresh, warm glazed donut. I learned a couple of weeks ago that they are closed on Mondays, I spent the whole drive from Marble Falls on my way to San Saba getting ready for that bakery, only to be denied.
