    You don’t have to use cornish hen (too many bones not enough meat) and you don’t have to stuff it (too lazy, time consuming) either. When I make it I usually buy a nice sized whole chicken from Trader Joe’s and pull apart enough pieces for each serving.

    Roux in a jar is a disgrace to every self-respecting coonass on earth. One of my Thibodaux buddies' mom sent me a jar of Savoie's (sp?). Tried it once, threw the rest of the jar in the trash.

    I just spent 45 minutes wisking mine. Somewhere around a pecan shell color.

    I'll try to dig up my great grandma's seafood gumbo recipe - it's delicious and as authentic as it gets.

    Typically, I'd agree. But try it before you come down on it. Again, a cajun friend introduced me to it years ago.

    I'd love to see it. My brother-in-law is Cajun and makes a superb seafood gumbo. He's into his 80's now and I've never asked him for a recipe. I just scarf up several bowls when we go to Houston during the holidays. You reminded me that I have to take care of business! These great cooks aren't around forever. If you don't get their recipes while they're living, and no one else in the family thinks to do so, when they are gone, that wonderfulness is gone as well. Forever.

    My wife is from Louisiana (and a great cook).

    Roux in a jar? She started laughing.

    Some of the Ingredients: Niacin, thiamine mononitrate, folic acid, and monosodium glutamate.

    UH NO THANKS!!!! Now I know why she laughed.

    Not sure you understand the concept of "National Reviews." I've told you before, but I guess you don't get it.

    You asked for soup ideas. I gave you a gumbo recipe that is easy and works quite well. And I've had gumbo just about everywhere in Houston. And, believe it or not, we have authentic cajun restaurants here...

    I honestly couldn't tell you the last time I had gumbo in LA, but it was probably ACME, which is nothing special.
