How do you like your steak?

    On the Rare side of medium rare...so RMR.

    And a side of peppercorn sauce - for an occasional dip.

    The only steak I enjoy with a sauce is Filet. Au Poire and Steak Diane being my favorites. I like toppings sometimes like crab and mushrooms or shrimp and crab with lemon caper butter. Also like stuffing a filet with a good blue cheese. I also make a really good horseradish cream sauce. Other than that, the most I will do is L&P Worscetishire.

    Reviving this thread. Does anyone order their steaks Pittsburgh? I just discovered it....That hard char on a medium rare Ribeye is amazing.

    This is perfect, strangely enough I've convinced my wife of eating it more on the rare side, well done = gross/just wasted my money on steak/why bother

    When I first met my gf 5 years ago, she would only get the Roasted chicken at Texas Roadhouse. She started trying the sirloin in medium well, which I quickly convinced her to try a better cut...I swayed her to the 6 oz filet mignon, however she still insisted on it cooked medium and butterflied. For Valentines day, she took my medium rare New York Strip seasoned and cooked to perfection, and now she has a little taste for blood. Last night at Roadhouse, she went with the Ribeye and got it Medium/medium rare Pittsburgh. Soon, my plan will be complete and she'll be eating a medium rare ribeye! Next step, to get her off that damned A1.

    I've been experimenting with using mayo when I cook my steaks. Basically you smear it on both sides before searing, and the egg & fat create a really nice crunchy crust without charring the outside and making it bitter. I wanna try it with beef tallow mayo to see if that makes a difference, but I've been too lazy to try it.

    Medium rare also neat.
