papa charlie's is legit - or was when he was out of a trailer at jackson's watering hole. his brisket taco with pico is un-freaking-real. roegels is the best i've had in Houston proper - legit all around. brisket approaching phenomenal status.
who has the best burnt ends in the Austin area? I'm always busy with the moist brisket and ribs but this burnt end talk has me wanting some.
My gf works in spring and she brought home lunch leftovers from Corkscrew and it was damn delicious. I just cant image how much better it would be eating it fresh there.
If you go through Bryan Tx stop at Fargo's pit bbq the burnt ends or great but usually sold out by 10:30 am. Brisket is good.
I had Roegels yesterday. The brisket and ribs were very good, IMO. Up there with Corkscrew for the best I've had in Houston.
Buy this book. Has a great recipe for Brisket as well as how to make burnt ends, BBQ spaghetti, pork ribs, etc. My personal favorite recipe in this book is their smoked fried chicken where you soak chicken thighs in a buttermilk tabasco bath overnight, place underneath a brisket to get the drippings from the brisket and the smoky flavor, and then fry up like you normally would. Best fried chicken I've ever had, and I've been to BBQ Inn.
I know how to make them and I've been smoking briskets for over 30 years... I was asking about places to buy some in the area for next time I want some and don't have time to set aside for smoking. Thanks for the recommendation though.
I'm not into burnt ends but you get better burnt ends with high heat. I would probably try the places like Kreuz since they are known to use 400+ degree smokers.
Did the trip to Franklin BBQ. Pretty good trip. Before we went to wait in line, we went to Voodoo Donuts. Great donuts there, completely ridiculous. If you haven't gone there, I recommend it. They're open 24 hours a day and only take cash. Got in line at Franklin's around 8. Ordered shortly after 1. Basically got 1 pound of everything (brisket, ribs, turkey, pulled pork, and sausage). They had beef ribs too, but I didn't get any. Looked great on other's plates though. Everything was amazing. Brisket was top notch, ribs were great too. Pulled pork and turkey also great. Sausage was so so for me, but I'm not a huge sausage fan anyway. I feel like this is just the beginning of my BBQ trips, and I need to go out to Lockhart next. Then I guess Taylor.
