Go here for cool screen shots of upcoming (some surprising games), including Zelda, Mario, Wario, two new Star Wars, Super Monkey Ball 2 and others.

Nintendo games may not look "mature" but they are always very very fun (Super Monkey Ball and Pikmin being prime examples), and these look like they will continue in that manner.

Has anyone heard of any Final Fantasy type games being created for the Gamecube yet? I have always enjoyed those types of role playing games, but have heard nothing concerning that genre with regard to the Gamecube.

Not yet. Mostly square (or the subisidary part of square working on N games) will be doing Gameboy advance games, and are porting FF tactics for it right now.
The only hint of a square game coming for GC is that they said they wanted to make a game that took advantage of the GC - Gameboy advance connectivity stuff. There were rumors of a game based on some cartoon in Japan, called Final Fantasy Unlimited, but nothing confirmed.
I think it'll be at least a year before any Square game comes out for the GC, if at all. Probably longer since they'll be focusing mainly on Gamboy Advance.
